Thought I would share this recipe... Made it last night for lunch today and it was great!
Ingredients:
4 teaspoons olive oil
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
1 red onion, chopped
3/4 pound of ground chicken (I used turkey)
1 tablespoon all-purpose flour
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon unsweetened cocoa powder (weird I know but it was yummy!)
1/8 teaspoon cayenne
3 (14 1/2 ounce) cans of crushed tomatoes (I used fresh ones from the garden!)
2 tablespoons balsamic vinegar
3/4 cup canned chickpeas, rinsed and drained
1. Cook peppers and onion until softened, add chicken and cook until brown
2. Sprinkle with: flour, chili powder, cumin, cocoa powder and cayenne stirring constantly, cook for about 1 minute
3. Stir in tomatoes and balsamic vinegar, bring to a boil
4. reduce heat and simmer for 30-40 minutes stirring frequently
Only 8 WW points per serving (serving is 1 1/2 cups)
